Summer Peach Caesar Salad

Another perfect way to enjoy fresh juicy summer peaches!

PEACH CAESAR SALAD

INGREDIENTS

 Please use Organic produce

10 Little gem (small mini) Romain lettuce, pulled apart, rinsed and dried well.If you have a salad spinner that is the best, if not roll them in paper towel to dry really well.

4 tablespoons of fresh lemon juice

4 ripe organic peaches, sliced, skin on, in half and quartered, pour over the lemon juice and toss  to stop them from turning brown

Parmesan cheese sliced into ¼” slices, 2” long so each serving has at least 5 slices

¼ cup micro greens for garnish

Kosher salt

INSTRUCTIONS

 For each serving, arrange enough Romain to fill a breakfast bowl. Add the Parmesan slices, and slices from ½ of peach.

Add micro greens loosely over

Sprinkle on a pinch of kosher salt over and serve.

Serve with 3 tablespoons of Caesar dressing and 8 to 10 croutons on the side.

CAESAR DRESSING

Makes 1 cup

INGREDIENTS

3 anchovy fillets

1 small garlic clove peeled

½ cup extra virgin olive oil

¼ cup Dijon mustard

½ cup fresh lemon juice

2 Tablespoons Worcestershire sauce

¼ teaspoons kosher salt and cracked black pepper

INSTRUCTIONS

Place all of ingredients in a blender and blend for 30 seconds.

It will be perfectly blended, smooth and creamy!

CROUTONS

INGREDIENTS

Pre-heat oven 325 F.

2 cups sour dough bread cut into small cubes

2 tablespoons of extra virgin olive oil

½ teaspoon of organic garlic salt

Pre-heat oven 325 F

Place the sour dough bread in bowl, drizzle over the olive oil and use your hands to toss together well.

Sprinkle over the garlic powder and toss together again.

Bake in a pre-heated oven on a baking sheet for 20 to 30 minutes (keep a watchful eye on them) turning every 10 minutes until the cubes are crunchy and turn a golden color. Set aside, let cool completely.

You can double recipe if you like and save any left-over croutons in tightly covered glass jar for 2 weeks.

If you can’t find “Little Gem or Mini Romain, regular Organic Romain lettuce is fine. Just tear them into small pieces to fit the bowl. J
