Massaged Kale Salad

If you are a lover of KALE then this salad is for you! As you know by now not only do I love food but I always make a conscious decision as to the benefits of what I am eating. In this case everything in this light, citrusy salad is super flavorful, filled with an abundance of anti-oxidants, vitamins, minerals and is anti-inflammatory!  

I don’t judge if you are not a kale fan, I’ve heard people complain it tastes like dry chewy leaves. So how to get past that and give this a try?

Here are two tips on how to prepare the kale that perhaps will help make you change your mind.

1.Tear the leaves off the stems, tear into small pieces and place into a salad bowl. Discard stems.

2. Massage the avocado into the leaves with your hands for a good minute, it breaks down and softens the leaves about 5 to 10 minutes before you add the dressing.

MASSAGED KALE SALAD WITH CREAMY AVOCADO DRESSING AND FUJI APPLES

2 large servings

INGREDIENTS

1 bunch of curly kale, stems removed and discarded

2 ripe avocados

2 tablespoons extra virgin olive oil

3 tablespoons fresh lemon juice

2 tablespoons rice vinegar

1 teaspoon Himalayan sea salt or kosher salt

2 scallions finely chopped

3 tablespoons dried cranberries

1 cup Pinole nuts toasted *

INSTRUCTIONS

1. Tear the kale into small pieces into a large salad bowl.

2. Peel and seed 1 avocado and use your hands to massage the avocado all through the kale for about 1 minute to get the avocado creamy.

3. Peel, pit the other avocado and cut into bite size pieces and add to the salad. Add olive oil, lemon juice, rice vinegar, salt, scallions, dried cranberries and Pinole nuts and mix gently.

*To toast Pinole nuts place in a small frying pan and cook on medium heat until they start to turn a rich dark golden color, about 5 minutes. Don’t walk away they can burn easily!
