easy Summer Salad Recipe GREEN APPLE CARPACCIO WITH BLUE CHEESE

If you are crazy for cheese and fruit you will love this light, cool and refreshing apple and cheese carpaccio to serve along- side your next cheese and fruit platter.

Full flavored cheeses that I like to pick from are Manchego, aged gouda, Gruyere, St. Agur blue cheese, St. Andre triple cream brie, Camembert, Gorgonzola, imported Parmesan.

Healthier choices are Greek Feta, aged sharp Cheddar, fresh Mozzarella, Swiss, Goat, ricotta. These are lower in sodium and fat.

I don’t eat cheese often but when I do I’m really careful to choose wisely and not to eat the whole board which I’m perfectly capable of doing! Cheese is a good source of calcium but let’s be real it is high in calories, sodium, and saturated fat. I choose to eat healthy 98% of the time but sometimes I want cheese! Oh, and a glass of chilled white wine!

GREEN APPLE CARPACCIO

Ingredients 

3 large cold Granny Smith (Green Apples) save one stem from apple

1/3 cup lemon juice

3 tablespoons Saint Agur blue cheese (my preference), you can also use Maytag blue cheese or Gorgonzola!

1-1/2 tablespoons extra virgin olive oil

2 teaspoons of honey

6 whole walnuts broken into small chunks

1 mint leaf

Instructions 

Use a mandolin to slice the apples into ¼” slices. Use a pastry brush to lightly brush both sides of apples with lemon juice (so they don’t turn brown) and start to arrange them on a 10” plate in a circle.

When the apples have covered the plate, (you may have some leftover) Scatter the blue cheese over the top and drizzle on the olive oil and honey.

Add walnut pieces take a slice of apple place in the middle of the plate and garnish with the stem and mint leaf.

Serve along-side a Cheese platter!
