Nothing better than the sweet, ripe, sun kissed flavor of summer strawberries. Yes, I know it’s still spring but living in California we get a bit of a jump start on fresh berries. I have to admit though that mid-summer berries are at the peak of flavor and the best time to enjoy them. However, what’s wrong with getting a jump start on summer and the 4thof July celebration! By the time we get to that point I am going to be posting recipes to consider for this fun filled family and friends day that are prepared in a way that is heart smart, and healthy.   What’s better than family, fun, and food. Yes, hot dogs are still on the menu along with baked beans, burgers, coleslaw, potato salad and some new recipes to try. Stayed tuned.

Serves 4


1-1/2 cup ripe strawberries, hulled, pull 4 fresh strawberries out and set aside.

1 cup 100% agave tequila,

1/2 cup fresh lime juice

½ cup fresh lemon juice

1cup Agave syrup

Pinch of salt

1 cup triple sec

½ cup Chambord, (raspberry liqueur)

Margarita coarse salt

Fresh Ice cubes (5 for each glass)

2 cups crushed ice (optional, if you are going to blend the Margarita)


In a blender add strawberries and process for 2 minutes. Pour mixture into a mesh strainer over a bowl to remove the seeds.

Rinse out blender and add the pureed strawberries, and the next 7 ingredients and mix.

Dip the tip of your Margarita glass in water then roll it in the coarse salt.

Fill the glass with Margarita mixture 3/4’s of the way up the glass. Add 4 to 5 pieces of ice. Mix, add fresh strawberry on the rim as garnish.

I like my Margarita’s blended so I add 2 cups of crushed ice to the blender and process until well blended.
