GOOD OLD FASHION NEW YORK HOT DOGS WITH ONION SAUCE

INGREDIENTS

Makes 8 hot dogs

2-10 OZ packages of 100% Grass-Fed, No hormones-no antibiotics hot dogs

1 Tablespoons extra virgin olive oil

2 medium onions sliced thin (Approximately 4 cups)

2 Tablespoons tomato paste

½ teaspoon kosher salt

2 teaspoons of organic honey

3 cups of water

2 teaspoons of organic honey

¼ cup Apple Cider Vinegar

2 teaspoons of crushed red pepper flakes

2 packages of whole wheat hot dog buns

1 jar of Kosher Dill cucumber pickle chips

2 cups of Sauerkraut

Dijon Mustard

INSTRUCTIONS

ONION SAUCE

This onion sauce is so good I double the recipe because everyone just slathers a good heaping helping over the dog!

Heat the olive oil in a medium saucepan on medium-high heat. Add onions, sauté for 8 to 10 minutes stirring often just to release the natural juices. (Do not brown)

Add the tomato paste and cook for one minute stirring the whole time. Add salt mix, add honey mix again.

Add water, bring to a boil then reduce heat to a slow boil for 45 minutes. Add vinegar, red pepper flakes, simmer for an additional 40 minutes or until most of the liquid has evaporated and the sauce is thick. Set aside.

Onion sauce can be made a day ahead of time and will keep for 3 days in a tightly covered Mason jar for up to three days.

HOT DOGS

Boil hot dogs gently for 20 minutes.

Heat the sauerkraut.

Place hot dog into the bun, add pickles tucked into one the side of bun and hot dog. Add 1-2 tablespoons of onions sauce or more if you like, sauerkraut and squiggle on Dijon mustard!
