 HEALTHY SMOOTHIE RECIPE COLD COCONUT CREAM PIE

Instead of a sugar laden, high calorie, high fat content piece of pie, please give Coconut Cream Pie in a glass a try, completely dairy free. Nothing better than the combination of peanut butter, bananas, coconut and chocolate!

INGREDIENTS

SERVES 2

2- 6 ounce drinking glasses chilled in the refrigerator 1 hour

2 cups Coconut Bliss dairy free ice cream

6 ice cubes

¼ cup organic smooth peanut butter

1 vanilla bean split open seeds scraped and placed in blender

¼ teaspoon ground cinnamon

Organic dark Chocolate sauce

1 large banana

1-1/2 cups coconut flakes toasted*

1 cup So Delicious Coconut non-dairy whipped cream

INSTRUCTIONS

In a blender add Coconut Bliss ice cream, ice cubes, peanut butter, vanilla beans, cinnamon. Process for 30 to 45 seconds until creamy smooth.

When ready to serve remove glasses from freezer.

Drizzle small amounts of chocolate sauce on the bottom and sides of both glasses. Add the mixture ¾ of the way up both glasses evenly.

Peel banana, slice ¼” thick and push 4 to 5 slices into the sides of each glass so you can see them.

Add 1/4 cup of whipped cream in each glass then drizzle chocolate sauce over top of. Sprinkle 1 tablespoons of toasted coconut over top per serving!

*TOASTED COCONUT FLAKES

Pre-heat oven 350F.

Place the coconut flakes on a baking sheet, shake back and forth to flatten evenly. Bake until coconuts turn golden brown. Do not walk away, watch carefully and as they will quickly turn and burn. Remove when golden and toasty from oven and set aside.

Extra toasted coconut flakes will store nicely in a tightly closed Mason Jar for up to 2 weeks. You can sprinkle them over salads, use in smoothies, topping for oatmeal, curry, and Asian infused soups!

COCONUT WHIPPED CREAM

In a mixer fitted with wire whisk add the coconut cream until light and fluffy. Whisk in the sweetener, agave and vanilla.

Top the chilled pie with whipped cream and garnish with extra lime zest.
