Fall has to be one of my favorite times of years. The smell of my mother’s freshly baked holiday desserts baking in the oven and the sound of my siblings playing in the backyard as their feet hit the falling leaves created such a memorable sound of fall. Not only does fall bring change in the weather, but also it brings delicious heartwarming memories of the season like Christmas, football, and family gatherings. It represents warmth, love, and family.

Ingredients For the Bars:

  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup canola oil
  • 1 can pumpkin purée
  • 4 eggs, room temperature
  • 1 Tablespoon of pure vanilla extract


Sift Ingredients:

  • 2 cups all purpose flour
  • 2 Teaspoon baking powder
  • 1 Teaspoon baking soda
  • 1 Teaspoon table salt
  • 2 Teaspoon ground cinnamon
  • ½ Teaspoon ground ginger
  • ½ Teaspoon nutmeg
  • ¼ Teaspoon clove

Frosting Ingredients:

  • 4 oz. white bar chocolate, chopped
  • 1-½ package of cream cheese, softened (12 oz.)
  • 1-½ sticks unsalted butter, softened (12 Tablespoons.)
  • 3 cups sifted powdered sugar

Garnish Ingredients:

  • ¼ cup each dried cranberries, crystallized ginger, and pecan pieces chopped together

Recipe for the Bars:

Preheat oven to 350° F.

  1. Coat a 11½ x 16½ inch baking sheet with a non-stick spray.
  2. In a large bowl, whisk together granulated sugar, brown sugar, pumpkin purée, oil, eggs, and vanilla in a bowl and set a side.
  3. In a separate bowl, sift the dry ingredients of flour, baking powder, baking soda, salt, and spices into the pumpkin mixture whisk together until combined.
  4. Spread the batter onto the baking sheet.
  5. Bake until a toothpick can be inserted and comes out clean; about 20 minutes.

Baking Tip: Allow the bars to cool completely before frosting.

Frosting Recipe:

  1. Melt the white chocolate in the microwave about 1-2 minutes. Stopping every 15 seconds to mix. ( This helps so it doesn’t burn) Stir until the chocolate is smooth.
  2. In a stand mixer or with a hand mixer, beat the cream cheese and butter on medium speed until smooth.
  3. Reduce speed and add the melted chocolate and beat together until smooth.
  4. Add the powdered sugar and beat together on a low speed.
  5. Spread the frosting over the bars.
  6. Sprinkle garnish over top of the frosting.
