I KNOW , I KNOW, YOU’RE PROBABLY THINKING WHAT’S THE BIG DEAL EVERYBODY HAS A RECIPE FOR DEVILED EGGS! YES EVERYBODY DOES SO I’M THROWING MINE INTO THE MIX! I ALWAYS LAUGH WHEN CHEFS ON T.V TALK ABOUT WHO DOES DEVILED EGGS BETTER AND ACTUALLY DEVOTE A WHOLE SHOW ON THEM. BESIDES DEVILED EGGS HAVE MADE A COMEBACK LIKE BETTY WHITE, BETTER THAN EVER!

THESE DEVILED EGGS EASY TO MAKE, TAKE LITTLE TIME, ARE LIGHT, SMOOTH AND FLUFFY! THE SECRET IS HOW TO BOIL THEM SO THEY TURN OUT PERFECT EVERY TIME! FRESH EGGS ARE HARDER TO PEEL SO IT’S BEST TO USE EGGS 3 TO 4 DAYS OLD IN REFRIGERATOR.
THE RIGHT COOK TIME IS IMPORTANT AS WELL!
A LITTLE TIP FOR KEEPING THE EGGS FROM SLIDING ON YOUR SERVING DISH ALL OVER THE PLACE. BEFORE YOU STUFF THEM SLICE A TINY PIECE OFF THE BOTTOM OF THE EGG WHITE SO IT WILL LIE FLAT.

Ingredients: 

  • 6 ORGANIC EGGS
  • 4 TBSP. MAYONNAISE
  • 1 TSP. DIJON MUSTARD
  • ⅛ TSP. CAYENNE PEPPER
  • 3 PIECES RADISHES , SLICED THIN THEN CUT INTO STRIPS

Instructions 

IN A POT BIG ENOUGH TO HOLD THE EGGS ADD COOL TAP WATER AND COVER THE EGGS BY 2″
ON MEDIUM HIGHT HEAT BRING THE WATER TO BOIL, TURN OFF BURNER
COVER THE POT WITH A LID AND MOVE IT OFF THE BURNER
LET IT SIT FOR 10 MINUTES

REMOVE THE EGGS USING A SLOTTED SPOON INTO A BOWL
UNDER COOL RUNNING WATER PEEL THE SHELLS FROM THE EGGS FIRST BY TAPPING (GENTLY) THEN ROLLING IT ALL OVER (GENTLY) SEVERAL TIMES ON THE SIDES OF THE SINK TO CRACK AND LOOSEN THE SHELL AND THE MEMBRANE.
GENTLY TRY TO GET UNDER THE MEMBRANE AND LIFT IT OFF, THE SHELL SHOULD EASILY COME OFF WITH IT.

LET THE EGGS COOL TO ROOM TEMPERATURE

SLICE THE EGGS IN HALF FROM TOP TO BOTTOM
REMOVE THE YOLKS AND PLACE IN A BOWL
PLACE THE EGG WHITES IN A BOWL OF COOL WATER TO REMOVE ANY REMAIN YOLK
LET THEM DRAIN ON A PAPER TOWEL
DRY WITH A PAPER TOWEL GENTLY BEFORE STUFFING THEM

MASH THE YOLKS VERY SMALL WITH A FORK
ADD MAYONNAISE, MUSTARD, CAYENNE PEPPER
WHIP USING THE FORK UNTIL SMOOTH AND CREAMY
PLACE THE WHIPPED YOLKS INTO A PASTRY BAG WITH A TIP THAT WILL MAKE A NICE DESIGN AND START PIPING THE FILLING INTO THE EGG WHITES

ADD SEVERAL PIECES OF THE RADISH
YOU CAN SPRINKLE EXTRA CAYENNE OVER THE TOP IF YOU LIKE

CHILL IN THE REFRIGERATOR AT LEAST AN HOUR BEFORE SERVING
