Last Minute Side Dish for Your Summmer BBQ

A flavorful slaw for your BBQ or to put between sandwich’s to add a tangy crunch! There’s no mayo in this recipe so it has a brighter flavor as the lemons and olive oil shine though. I freshen it up further by adding fresh parsley or cilantro and more crunch by adding peanuts!
Cabbage is a low calorie, nutrient-dense food that offers an excellent source of many nutrients including vitamin C, folic acid, potassium, vitamin B6, calcium, biotin, magnesium, and manganese.
  • 5 CUPS CHINESE CABBAGE (APPROX) 1 LB. , FINELY SHREDDED
  • 1 CUCUMBER , PEELED SEEDED AND DICED
  • 1 GRANNY SMITH APPLE, PEELED, CORED AND CHOPPED INTO BITE SIZE PIECES
  • JUICE FROM 1 FRESH LEMON
  • DRESSING
  • 2 TBSP. RICE WINE VINEGAR
  • 2 TBSP. APPLE CIDER VINEGAR
  • 1 TSP. KOSHER SALT AND CRACKED PEPPER
  • 2 TBSP. ITALIAN PARSLEY , CHOPPED FINE
  • ¼ CUP ROASTED PEANUTS, CHOPPED COARSELY
  • 2 TSP POPPY SEEDS
  • ¼ CUP EXTRA VIRGIN OLIVE OIL

PLACE THE CABBAGE, CUCUMBERS, AND THE APPLES IN A BOWL.
ADD LEMON JUICE, MIX AND SET ASIDE

WHISK TOGETHER RICE WINE VINEGAR, APPLE CIDER VINEGAR, SALT, PEPPER, PARSLEY AND PEANUTS, POPPY SEEDS AND OLIVE OIL!
POUR OVER CABBAGE AND MIX TOGETHER WELL!
ENJOY!!!
