- scrub potatoes with papertowel to remove dirt
- cut potatoes into finger-size strips
- rinse strips in sink to thoroughly remove starch (4-5 times with 5 min rest in between)
- once done pat completely dry
- heat 1.5 inch of conala or vegetable oil in skillet
- blanche potatoes until lightly golden
- remove and place on paper towel to dry
- once dry, put back in oil at higher heat for 3-5 minutes or until golden brown
- remove and serve

- mayo
- minced garlic

- salt and pepper
- cayenne

- mayo
- ketchup
