– scrub potatoes with papertowel to remove dirt
– cut potatoes into finger-size strips
– rinse strips in sink to thoroughly remove starch (4-5 times with 5 min rest in between)
– once done pat completely dry
– heat 1.5 inch of conala or vegetable oil in skillet
– blanche potatoes until lightly golden
– remove and place on paper towel to dry
– once dry, put back in oil at higher heat for 3-5 minutes or until golden brown
– remove and serve

– ketchup and tobasco

Garlic aoloi sauce (mix to liking)
– mayo
– minced garlic
– lemon
– salt and pepper
– cayenne

Animal Style (mix to liking)
– mayo
– ketchup
– lemon juice
– cappers
– dill
– cornichons
– salt and pepper
