Chef Danny Fischer’s “Baby Blues Barbecue” Recipes

Dry Rub Recipe:
15 cups of 16 herbs & spices (garlic, salt, onion, chili peppers, etc. – whatever you have in your spice cabinet)
15 cups light brown sugar
3 cups ground coffee beans

-Mix Ingredients
Chipotle Butter Recipe:
3 chipotle peppers (roasted and peeled clean)
3 lbs. Softened butter
2 oz. chipotle peppers

-Blend all together
Memphis Baby Back Ribs (Pork):

St Louis Cut
1. Dry rub is placed all over ribs

2. Ribs go into smoker (6 hrs. approx.)

3. Finish on the grill until sizzles all over (about 5 minutes)

4. Light basting with BBQ sauce
Texas Ribs (Beef)
1. Use more dry rub than Memphis style/place all over ribs

2. Ribs go into smoker (6 hrs. approx.)

3. Finish on the grill until sizzles all over

4. Wetter basting with BBQ sauce
Okra Recipe:
1. Heat 4 tablespoons of extra virgin olive oil in a pan.

2. When smoking hot, add 2 cups of frozen okra to pan and saute for 30 seconds.

3. Add a tablespoon of minced garlic, pinch of salt and pepper and saute for several minutes.

4. When okra is soft, add another pinch of garlic, salt and pepper.

5. Remove from heat and add 2 dashes of apple cider vinegar.
