PROSCIUTTO, MELON AND FRESH FIGS!
Serves 4
When melons are at their peak of flavor at the end of summer there is nothing better than a refreshing prosciutto & melon salad on a bed of wild arugula. Slice open a ripe soft fresh fig and you have the perfect salad for lunch odinner. Serve with crunchy French bread and a cold glass of Pinot Grigio. This salad is light and refreshing!

4 cups wild or baby arugula
3 Tablespoon Extra Virgin olive oil
2 Tablespoon fresh Lemon juice
1/4 teaspoon kosher salt
8 slices imported prosciutto
1 cantaloupe, sliced in half, seeded
4 fresh figs
12 baby Roma tomatoes or cherry tomatoes sliced in half
Crack a bit of black pepper over top (optional)
Champagne or red grapes for garnish
2 to 3 stems of fresh mint for garnish.
Use a melon baller to make 20 cantaloup balls
Place the arugula in a salad bowl. Whisk together, olive oil, lemon juice and salt. Pour over arugula and mix gently. Distribute evenly over the four dishes. Lay 2 slices of the prosciutto over the top of the arugula, arrange the cantaloupe balls and tomatoes over the salad. Add the fig and arrange the grapes along the side of dish! Garnish with fresh mint!
